Organic Cocoa Mass - Peru San Martin
Organic Peru San Martin cocoa mass is very mild, fragrant with cinnamon. Cocoa beans are obtained from ecologically certified small-scale farmers. The San Martin region is characterized by many mountains, ranging from about 300-900 meters above sea level, home to various local communities. It's a challenging region for traditional agriculture, but the best for cocoa!
Where it's grown
The cooperative we mostly work with in San Martin purchases cocoa from 120 producers. On average, each producer has about 2 hectares. The cooperative itself employs 47 permanent workers, including 20 women.
In the past, the areas of this department were dominated by coca plantations. Although growing coca trees is not inherently bad or illegal, as it's a fantastic plant used for various medicinal purposes and has a rich history linked to Inca heritage and indigenous communities (for many, it's a sacred plant), we all know that, unfortunately, it is also a key ingredient in illegal drug production. Therefore, for several years, both the Peruvian government and various international governments, including the USA, have been promoting the cultivation of alternative crops. As a result, coffee and cocoa cultivation has become popular in this region. While cocoa trees have grown in this region for millennia, they are now used to improve the lives of local people, aiming for more sustainable incomes and more sustainable rainforests.
Variety
Criollo - one of the rarest cocoa varieties in the world (only 5 percent compared to other cocoa varieties). It is known for its strong aroma.

How to make cocoa (for one cup):
- Cocoa 10 - 35 g
- 40 ml hot water
- 80 ml plant-based milk
- Favorite sweetener (optional)
Put all the ingredients in a blender and blend for 1 minute.
How to consume cocoa:
10 - 15 g - mild cocoa drink, suitable for daily consumption
25 - 35 g - medium-strength cocoa drink
35 - 40 g - strong cocoa drink, suitable for cocoa ceremonies
