This weekend my friends and I went on a picnic by the lake, so I immediately started thinking about making something quick, healthy and delicious. I immediately thought of "energy balls"! And you know what, I wasn't wrong at all, because these healthy cocoa bean balls were the first to disappear from the table :)
So if you're thinking of making something delicious and healthy for a larger company - here's the recipe:
INGREDIENTS (about 10 balls)
- 200g almonds
- 200g dates
- 4 tablespoons cocoa beans
- 1 ½ tablespoons nut butter
- 1 tablespoon cocoa butter
PREPARATION
- Melt the cocoa butter in a saucepan over low heat.
- Heat the cocoa beans in a pan or oven. Heating the beans will make the shell easier to peel.
- Place all ingredients in a food processor along with melted cocoa butter and roasted cocoa beans.
- Blend until smooth.
- Toss with a spoon and roll the balls between your palms
- Refrigerate for about 30 minutes to harden the balls.
